
Quick, healthy, and delicious. Some sort of weird alchemy happens on the little sheet tray and everything tastes better.
For the Salmon:
1 pound salmon, cut into 4 portions
1 head of broccoli, florets cut or 1 8 oz bag of frozen broccoli florets
1 white onion, sliced
1/4 cup mirin
1/4 cup soy sauce
1/4 cup Milligan’s Maple Syrup
2 tablespoon toasted sesame oil
1 lemon, zest and juice
*OPTIONAL:
Chili pepper, thinly sliced
Cilantro
Directions:
Preheat oven to 420 degrees
Line a rimmed sheet tray with aluminum foil.
Evenly spread onions and broccoli on a sheet tray.
Place the salmon on the sheet tray.
Drizzle all liquid ingredients all over the salmon, onion, and broccoli mixture.
Cook until salmon and broccoli begin to brown, 15-18 minutes.
Serve with rice.
