Soy-Maple Sheet Tray Salmon

Quick, healthy, and delicious. Some sort of weird alchemy happens on the little sheet tray and everything tastes better.


For the Salmon:

  • 1 pound salmon, cut into 4 portions

  • 1 head of broccoli, florets cut or 1 8 oz bag of frozen broccoli florets

  • 1 white onion, sliced

  • 1/4 cup mirin

  • 1/4 cup soy sauce

  • 1/4 cup Milligan’s Maple Syrup

  • 2 tablespoon toasted sesame oil

  • 1 lemon, zest and juice


*OPTIONAL:

  • Chili pepper, thinly sliced

  • Cilantro


Directions:

  1. Preheat oven to 420 degrees

  2. Line a rimmed sheet tray with aluminum foil.

  3. Evenly spread onions and broccoli on a sheet tray.

  4. Place the salmon on the sheet tray.

  5. Drizzle all liquid ingredients all over the salmon, onion, and broccoli mixture.

  6. Cook until salmon and broccoli begin to brown, 15-18 minutes.

  7. Serve with rice.
